Surely the photo does not do justice to my soft biscuits stuffed with apple. I used a mix of flour according to those I had in my pantry and I had to eat more and I chose the apple pulp annurca to make the filling. I do not know if you know it all, but it's a small apple dark red, typical of our area, which is matured in straw, very fragrant, juicy and with a flavor that is not too sweet, with a few notes of lemon. Of course you can replace with the type of apple you prefer or possibly with the chopped pear. Ingredients: 100g wholemeal flour 100g wholemeal spelled flour 80 g of soy flour 80 g brown sugar 125 ml of soy yogurt (I had red fruits to consume, but that's okay any other kind) 1 pinch baking powder salt to taste water 2 tablespoons of oat bran 1 handful 1 of corn flakes
Procedure: I simply mixed all the ingredients together until you get a workable dough with your hands, but not too crumbly. Except I grated apples and added to the pulp obtained the cinnamon and sugar. At this point I made the squares of pasta, I put a bit of stuffing and I closed them between your hands to form a ball (as if I were to make the dumplings!). Since the apple is juicy enough, the balls were a bit 'wet so I quickly passed in the bran and corn flakes to dry. I baked for 20 minutes at 200 . I pulled them out leaving it soft, but if you want you can cook them a little bit more to make them harder.
